India is known for its innumerable varieties of Mangoes such as Alphonso, Chaunsa, Dashehari, Langra, Kesar, Totapuri etc. The country leads the production of mangoes in the world and the best is considered as Alphonso mangoes. As the summers are in its full glory mango addicts are enjoying different mango recipes

Mangoes can be utilised in many ways, be it smoothies, juices, milk shakes, ice creams, salads or just plain cut pieces. Mangoes are used not only to make something sweet but savoury too. They can be eaten not only ripe but in raw form too.

Easy Mango Recipes 

Aam Panna

  • 2 raw mangoes
  • 50 grams of jaggery powder
  • 1/2 teaspoon of black salt
  • 1/2-inch piece of ginger
  • Handful of mint leaves
  • 1/2 bowl of water
  • 1 pinch of black salt
  • Salt

 

How to make Aam Panna with fresh raw mangoes?

Take two raw mangoes and wash them well. Put them in a pan and boil till they are soft to touch. Let it cool down and after removing the skin add the jaggery, black salt, ginger and some mint. Grind the entire concoction and keep it side. Next take a huge bowl add the puree some cold water and ice cubes. Serve it cold with some mint as garnish.

 

Raw Mango Salad

 

  • ½ cup chopped raw mango
  • ½ cup chopped onion, carrot
  • ½ cup boiled corn
  • Olive oil 1 teaspoon
  • Oregano, thyme 1 teaspoon
  • Crushed pepper and salt as required

Add all the veggies in a salad bowl, in a seperate bowl mix olive oil, black pepper, thyme, oregano and salt. Pour the content on the veggies mix well and serve.

 Mango chutney

  • 1 raw mango diced)
  • 1 medium size onion diced
  • Green coriander one small bundle washed and chopped
  • Some mint washed and chopped
  • 4 to six green chillies
  • Rock salt as required

Blend them all in a mixture remove and store.

 

Mango Lassi

  • Take a ripe mango washed and diced

 

  • A small bowl of thick curd

 

  • two tsp of sugar

 

Blend them well add water and serve cold with some small pieces of mango as garnish

 

Mango Pudding

  • 300 gms fresh cream
  • 300 gms mango puree
  • 200 gms white coverture chocolate
  • 4tsp agar agar

 

Add all the ingredients in a heavy bottom pan. Whisk well to mix the ingredients. Simmer for 5 to 7 minutes stirring continuously till you see small bubbles appearing around the edges but the mixture should not come to a boil. Whisk well and pour it in a mould keep in the fridge after cooling to set it. De-mould and serve with mango slices on it.

So enjoy the Alphonso’s this season in as many ways as you can or just enjoy it on its own.
